How to make great pistachio gelato.

Pistachio gelato is often used as a benchmark between gelaterias. Cheaper folks use artificial almond extract and bright green dye for their “pistachio” gelato. Here is everything you need to know to make our pistachio gelato:

Step 1. Start with fresh whole milk and sugar for your own gelato base (our recipe is a secret.)

Step 2. Find a local, family farm that grows amazing pistachios (the farm we use is also a secret, sorry.)

Step 3. Have the farmer’s grandfather roast and mill the nuts exactly the way we want (sorry, can’t tell you whose grandfather either.)

Step 4. Mix your gelato base and the freshly roasted pistachio paste together, then freeze it. Yum!
