Week 28: Lychee Sorbetto

Lychee ranks as one of our most requested flavors that we haven’t done. It seems like we’ve seen it hundreds of times in our flavor contests, suggestion boxes, and emails. Why haven’t we done it before? One, we only use fresh whole fruit in our sorbetto. Where others are happy with the canned stuff (or frozen, or pureed stuff), we only work with real fruit. But then, it’s difficult to get fresh lychee: this fragile fruit gets brown and smelly pretty quickly (and starts to taste like the canned stuff.) So when yesterday we finally saw three cases in our local fruit market.. that were a great red color and tasted amazing, we went on high alert and whipped this up for our flavor this week for our Flavor of the Week programme.

(And because it’s so popular, we thought we would actually leak this to our site a little before our usual Friday release.)
